Ginger and Chocolate Muffins

Just baked some big ass muffins ! A one-bowl pantry style -throw-it-all-in kinda- recipe!

Ginger & chocolate einkorn muffins
[makes about 9 large muffins]

  • 1.5 cups whole wheat einkorn flour (switch for almond meal for #paleodiet ).

  • 1/3 cup arrowroot flour

  • 1/2 cup mixed seeds (and some nuts too πŸ€·β€β™€οΈ).

  • 1/2 cup chopped paleo chocolate (aka @thrivemkt Dark choc sweetened with coconut sugar β€” though could sub for cacao nibs).

  • 1/3 cup maple syrup. - 1/2 tsp pink salt.

  • 1/3 cup coconut oil or ghee.

  • 3 eggs (*sub for chia or flax egg)..

  • 1/2 tsp baking soda.

  • 1/2 cup water.

  • 1 tsp vanilla extract.

  • 1 tbsp ginger root powder.


Directions:
β€’ Mix all the dry ingredients into a large bowl, then make a β€˜well’ in the middle, and beat in eggs, and all remaining wet ingredients. Mix the entire bowl together β€”β€”β€”β€” pour into a greased muffin tin (or you could make it into a cake, why not?!).
