Collagen Protein Bars
uch an easy-delicious-nourishing little snack on the go! Chockfull of protein and superfoods (oh heyyy cacao, hemp, chia, maca, golden berries and gojis!) -- zero refined sugar, grains and dairy -- and last but not least D E L I S H AF (I couldn't believe it either!)
INGREDIENTS
DRY
1 cup almond meal
1 cup LSA (or extra cup of almond meal if preferred!)
I cup puffed amaranth (optional booster!)
1/3 cup golden berries
3/4 cup raw organic cacao powder
1/2 cup cacao nibs
4 scoops collagen powder
1/2 cup hemp seeds
1/4 cup chia seeds
1/3 cup organic coconut flakes
1/4 cup goji berries
Pinch Himalayan salt
1 tbsp black sesame seeds
1 tsp vanilla extract (optional)
WET
2 eggs (sub chia egg or flax egg if vegan)
2 tbsp maple syrup (sub monk fruit / honey / rice malt / coconut sugar)
5-10 drops of liquid stevia (optional extra sweetener boost)
3/4 cup water or unsweetened nut mylk
1/3 cup coconut oil
INSTRUCTIONS
Preheat oven to 350F (around 180c)
Mix all dry ingredients together
Beat in eggs and all remaining wet ingredients
Mix Mix Mix
Get out a large baking pan and line it with parchment baking paper
Pour the mix on top and flatten roll out to about 1/2 inch thickness using an additional piece of parchment paper on top (this prevents the mix from sticking to everything! -- making it much easier to roll out! #gamechanger)
Bake for about 20 minutes until slightly toasted and firm (check it at the 15 minute point in case it needs to come out of the heat early!)
Allow the pan to cool the heck down (while you sneak a few cheeky crumbs!)
Slice into bars (makes about 12-14 bars roughly!)
Store in a container In the fridge (unless you live somewhere chilly? Then in your panty is just fine!)
