Paleo Golden Hot Cross Buns
Does anyone else drool when they see fresh hot cross buns? Not that you asked, but I sure do!!! So if you’re like me, but are also looking for a grain-free version of your favorite fruit bun, this one works like a treat!! You can also totally just use whatever flour floats your boat, and even add in some chocolate for a little extra deliciousness. Why not? bun appetit xo
Ingredients
3 cups almond meal
1/2 cup arrowroot flour
1 cup of organic currants or raisins (optional)
2 tsp baking powder
1 tsp turmeric powder (or simply use 2-3 tbsp Luna Fixa in place of spices!)
1 tsp cinnamon
1 tsp cardamon
1 tbsp ground ginger
pinch black pepper
3 flax eggs (sub: chia or reg eggs)
1/4 cup EVOO or Coconut oil (fat of choice!)
1 - 2 tbsp maple syrup [optional]
juice of half an organic orange plus zest and some chopped up peel (lemon / lime / grapefruit work too!)
OPTIONAL ADD INS: Hu Kitchen Chocolate gems, cacao nibs, coconut flakes, golden berries, nuts and seeds.
Crosses
2 tbsp coconut flour + water — enough to make a thin paste
OR 1 egg white and a dash of coconut flour (you can also just use any flour and water)
Directions
Preheat oven to 180ºC / 350ºF and line baking tray with baking paper
Mix all dry ingredients in a large mixing bowl.
In a separate bowl combine flax eggs, with vanilla, oil and maple (or sweetener of choice)
Combine with dry and mix well! Roll out into medium size balls and press down lightly to make a ‘bun’ shape -- makes about 12!
To make crosses (this bit was the hardest honestly!)
whisk coconut flour with some warm water— and using a piping bag create crosses! OR you can always cut a hole in the corner of a ziplock bag and use that instead!
Bake for around 25 minutes.
