Pumpkin, Cacao & Rose 'Fudge' Bites
These raw, vegan & paleo-friendly bites make for a delicious (and healthy!) nibble anytime a sugar craving should strike -- or even a breakfast snack with coffee! Why not?
INGREDIENTS
makes around 20 bites (depending on how you cut them!)
2 cups of almond meal
1/2 cup of cacao powder (sub for more almond meal if cacao is not your thang!)
1/2 cup of organic pumpkin puree
1/3 cup almond flakes
1 tbsp rose petals (for on top!)
1 tsp almond extract
3 tbsp maple syrup (coconut sugar/rice malt/coconut nectar)
1/2 cup freeze-dried strawberries
1/4 cup of tahini (sub: almond butter)
1/4 tsp Himalayan salt
Throw everything but the almond flakes and rose petals in a food processor and blend on high until thick and dough-like! (if it's too liquidly, add more almond meal or cacao powder (I opted for more almond meal in this case!). Pour (or blob rather!) onto a baking-paper lined tray or dish (I went with a flat rectangle baking pan). Using an additional piece of baking paper on top of the doughy blob, and a rolling pin (or glass jar works!) roll out the dough until it's about 1/2 inch thick. Garnish with the almond flakes and rose petals (cacao nibs?!) -- and some additional monk fruit or coconut sugar.
Place in the freezer to set (about 15 - 30 minutes). Cut into bite-sized slices and store In a container in the fridge (or freezer is fine -- it doesn't get too hard) between eating! Viola! xo
