Spiced Sweet Potato and Einkorn Waffles

Fave new waffle β€” inspired by my girl @sashayogawellness and our food-storming sessions ! This one is Japanese sweet potato + einkorn flour with a maqui berry, ginger & cacao glaze β€”YUP πŸ’†β€β™€οΈ ! So not my usual #grainfree variety, but so darn delish ! (You could also sub the einkorn for almond meal or cassava flour!)

Ingredients:

  • 3 small steamed sweet potatoes

  • 1/2 cup nut mylk (or coconut milk, waterβ€” if nut-free)

  • 1 cup einkorn flour (or almond meal)

  • 2 tsp raw ginger powder

  • 1/4 cup coconut oil or ghee

  • 2 tsp cinnamon

  • 1 tsp nutmeg

  • 1/4 cup arrowroot flour

  • 1/2 tsp Himalayan salt

  • 1 tsp baking powder

  • 1 tbsp lemon juice

  • 1/2 tsp baking soda


Add a dash of water if too thick! Simply pour all the ingredients into your food processor (potato skins and all!) and mix into a nice thick batter β€”- **[alternatively can add all wet ingredients into a blender and mix for 20 seconds, then combine with dry ingredients & hand mix !]β€”β€” heat up your waffle iron /// and you know the rest. β€”β€”β€”β€”β€”β€”β€”

Ginger + Maple + Maqui Berry Glaze

  • 1/2 cup cacao butter (melted in a double boiler)

  • 1/4 cup maple syrup

  • 1 tbsp @navitasorganics maqui berry powder

  • 1 tsp vanilla

  • 2 tsp raw ginger powder

  • 1 tbsp nut mylk (or hot water!)


Blend all together (I just poured it all into my @vitamix for 10 seconds or less).

Dollop on top, viola! Xo
