Apple & Kale Ancient Grain Loaf

Another day, another loaf-making experimentation! This one is using Einkorn flour -- I'm normally always making 'grain-free' stuff, but I wanted to play with using an ancient grain for a change!! Inspired by my wellness-foodie-FF Sasha, this loaf is actually easy to make, egg-free, and tastes kind of like a scone! The flour is also so naturally nutty & sweet in flavor that there's no need to sweeten it! Win-win. As with everything I do in the kitchen my moto is about simplicity and creativity. HAVE FUN, experiment -- play with different ingredients & flavors. Don't like apple? Sub it! Try a leek & kale loaf or tomato & basil!? SO many options! Want it sweet? Go for Apple & spices like cinnamon, ginger & cardamon-- with some maple syrup for extra YUM.

INGREDIENTS

[makes 1 loaf]

  • 2 large grated apples

  • 2 cups Whole Wheat Einkorn Flour

  • 1 cup coconut flour [subs: almond meal, buckwheat, oat flour]

  • 1 tsp baking soda

  • 1 tbsp Apple Cider Vinegar 

  • 1/4 cup ground chia seeds** [I skipped this step on the last loaf & it still worked, so you do YOU]

  • 2-3 tsp caraway seeds

  • 1 cup baby kale leaves

  • 1/4 cup coconut oil [melted]

  • 1 1/2  cups of unsweetened almond mylk [subs: any nut mylk or buttermilk if not vegan]

  • 1 tsp Himalayan salt [or maldon salt flakes sprinkled on top!]

  • Sunflower or pumpkin seeds to garnish 

Preheat oven to 350F

Mix all the dry ingredients in a large mixing bowl -- including the baby kale

In an additional mixing bowl mix all the wet -- including the grated apple

Combine wet ingredients with the dry --- mix mix mix, and knead too -- it will be pretty thick, so add a little water or extra mylk as needed, and get your hands in the bowl !!

Pour [or plonk if super thick and doey] in a greased loaf pan [I used a non-stick silicon loaf mould--though to make the loaf crusty, a pan-loaf would work better!] 

Bake for about 30-40 minutes or until a knife/toothpick comes out clean. 

Allow to cool down completely, then remove from the pan, and cool further on a wire rack. 

Slice & serve!

Topping suggestions: Ghee mixed with tahini & maple syrup (YUMMY AF), coconut oil & dash of salt, avocado, almond butter, applesauce--- basically everything takes amazing.
