Quick & EASY Carob Caramel Balls with Apricot & Vanilla

OK -- this one is super easy I promise! Simply mix all dry ingredients together in a large mixing bowl first. 

Make a 'well' in the middle and mix in the melted coconut oil, along with all remaining 'wet' ingredients, mix mix mix >>>

Combine 'wet' & 'dry' and mix again! Roll into small balls & place onto a plate or tray. Sprinkle with salt flakes & edible flower petals (if you have some-- NBD if not!)

Refrigerate for around 20 minutes & serve!

INGREDIENTS

  • 1 cup raw carob powder [subs: Raw Cacao Powder]

  • 1/4 cup Lucuma Powder

  • 1/3 cup Almond Meal (** sub this for desiccated coconut if you're skipping nuts!)

  • 10 finely chopped dried Turkish Apricots (ideally sulfate-free ones! sub: Golden Berries!)

  • 2-3 tbsp melted coconut oil (add more as need to make a 'dough' consistency)

  • 1-2 tbsp Maple Syrup** [Optional for extra sweetness!]

  • 1 tsp cardamon powder

  • 1 tsp vanilla powder or extract

  • 1/2 cup Tahini (this combined with the lucuma makes a delicious caramel taste!)

Sprinkle with Maldon Salt Flakes -- or Himalayan Salt
