Ginger & Chocolate Einkorn Muffins
Just baked some big ass muffins ! A one-bowl pantry style -throw-it-all-in kinda- recipe!
[makes about 9 large muffins]
1.5 cups whole wheat einkorn flour (switch for almond meal for #paleodiet ).
1/3 cup arrowroot flour
1/2 cup mixed seeds (and some nuts too 🤷♀️).
1/2 cup chopped paleo chocolate (aka @thrivemkt Dark choc sweetened with coconut sugar — though could sub for cacao nibs).
1/3 cup maple syrup. - 1/2 tsp pink salt.
1/3 cup coconut oil or ghee.
3 eggs (*sub for chia or flax egg)..
1/2 tsp baking soda.
1/2 cup water.
1 tsp vanilla extract.
1 tbsp ginger root powder.
Directions:
• Mix all the dry ingredients into a large bowl, then make a ‘well’ in the middle, and beat in eggs, and all remaining wet ingredients. Mix the entire bowl together ———— pour into a greased muffin tin (or you could make it into a cake, why not?!).
• Bake at 350F for about 20 mins! ✔️✔️✔️
