Peach Cobbler Cookies!

I love cookies & matcha — SO these beauties actually started out as an attempt to make a peach 🍑 cobbler (hence the name!) but half way through I decided it just wasn’t working & made cookies instead! Ha! Then I just started throwing lots of ingredients in (like a mad scientist) —cacao nibs, @eatingevolved midnight choc, gojis, seeds, nuts, collagen, maple — even a dash of tahini! I call this process #kitchenmeditation — you should try it sometime!

Rough ingredient & rough recipe below: (but really you can’t really go wrong!)

Ingredients

[makes about 8 medium size cookies]

Bring the above to the boil in a small saucepan/pot on high heat, stirring constantly (or as often as you can be bothered!)

In a large mixing bowl add the following:

  • 1 cup almond meal (just for a change!)

  • 1/3 cup coconut flour (or arrowroot would work too!)

  • 1/4 cup sunflower seeds

  • 1/4 cup pumpkin seeds

  • 1 tbsp chia seeds

  • 2-3 tbsp goji berries

  • 2-3 tbsp cacao nibs

  • 1/3 cup shredded coconut

  • 1/4 cup chopped dark choc (I used Eating Evolved unsweetened dark)

  • 1/2 tsp himalayan salt

  • 1 tsp cardamon

  • 1 tsp cinnamon

  • 2 scoops collagen powder (optional!)

  • 1/2 tsp maca powder (optional adaptogen boost!)

Mix Mix Mix — then add the following:

  • 1/3 cup coconut oil or ghee (it can be lightly melted, but no need to go for liquid— think of it like butter! AND add more if you feel it’s need more fat!)

  • 1/4 cup maple syrup (optional sweetener — if you don’t like your cookies sweet, skip it!)

  • 1 tbsp tahini

Mix it all into a big gooey seedy mess, and then using a spoon or your fingers— roll into 8-10 small balls and press down to make a cookie shape! (you could also just make this into a slice— I mean, you do you.

Pre-heat oven (I didn’t pre-heat but you probably should!) TO 350F and bake for about 15 minutes— or until slightly brown and firmer (I like my cookies soft— but if you’re into hard cookies, you will want to bake for 5 extra minutes, roughly!).
