Paleo + Keto Maca Choc Chunk Cookies

Just at home over here living my best kitchen life… Mainly because cookies are so easy to make — and adaptable based on your pantry— which I love. TBH though, I just really love cookies right now… You?

Ingredients

  • 2.5 cups almond flour (sub: Tigernut flour)

  • 1/3 c cacao nibs

  • 1 tbsp raw organic Maca powder (optional)

  • 1/3 cup monk fruit (subs: coconut sugar)** adjust to desired sweetness!

  • 1-2 tsp Vanilla

  • 1/2 tsp Himalayan salt 

  • 1/2 tsp baking soda

  • 1/2 cup almond butter (sub: tahini)

  • 2 tbsp melted coconut oil (sub: ghee/butter)

  • 3 tsp psyllium husk (sub: ground flax)

  • 1/2 cup raw chocolate (optional for choc chunks — love Hu gems for this, or DIY here— can just sub coconut sugar for monk or few drops stevia)

Optional add-ins: Goji berries, Goldenberries, nuts, seeds etc.

Simplest way to make: combine all ingredients in a food processor — then use a cookie scoop! BUT if you don’t have those things— bowls work great too! :)

  1. Pre-heat oven to 350F (180C)

  2. Mix all dry in large bowl

  3. Make a ‘well’ in the middle and mix in dry ingredients

  4. Combine! ** if dough feels to dry— can add either a dash more nut butter OR a little nut milk

  5. Roll into balls—and press down with a spoon/fork

  6. Optional Garnish: Walnuts / Chocolate / Cacao nibs / Almonds— you do you.

  7. Bake for 15 mins 350F for large cookies, and 10 mins for smaller cookies…
