Super Seeded Paleo Bread

Who doesn't love bread?! This recipe is based off of My New Roots -- an amazing, amazing recipe for absolutely easy and delicious bread. The main thing about it is, you cannot go wrong making it. It's all about intuitive cooking, and as I like to call it: Kitchen Sink Bread. I literally use everything and anything I have in my pantry, GF oats, Teff flour, honey, seeds, nuts, caraway -- even dried fruit. Just play with flavors, including adding turmeric powder & a dash of black pepper (for mega anti-inflammatory benefits!)...

Ingredients:

1/2 cup pumpkin seeds  
1/2 cup sunflower seeds
1/2 cup hemp seeds [optional for extra protein]
3/4 cup flax seeds
1 cup Chia Seed Gel (2 tbsp Chia Seeds + 3/4 cup water)
1 1/2 cups Teff or Almond meal
1 tbsp rosemary
1 tsp Garlic powder [optional]
1 tsp. pink salt
1 - 2 tbsp maple syrup | raw honey | agave [optional, YUM]
1/3 cup melted coconut oil
2 cups water [just add enough to make a dough consistency!]

Directions:

  • In a large bowl, combine all dry ingredients, stirring well. whisk in wet ingredients -- mixing very well until everything is completely soaked and dough becomes very thick (if the dough is too thick to stir, add more water until the dough is manageable). Let the big ball of dough sit out on the counter for at least 2 hours - or until you're fed up waiting(!!) -- can even leave overnight... Knead dough until your arms hurt :) 

  • Preheat oven to 350°F 

  • Place dough on a baking tray in the oven on the middle rack, and bake for 40 minutes - or until it looks pretty darn good -- you can't go too wrong, stick the knife in and make sure it comes out clean. 

  • Let it cool down completely before slicing/eating -- it will be much easier to cut, though I realize this is tough to do ... ;)
